We’re thrilled to finally lifting the curtain on Redbreast Pedro Ximenéz Edition, or Redbreast PX if you prefer its shorter nickname. Redbreast PX is the first Limited Edition release from the Iberian Series. Unique among the family, Redbreast Pedro Ximénez edition is a Single Pot Still Whiskey, triple distilled, initially matured in Bourbon and Oloroso Sherry casks before being re-caskedin delectable Pedro Ximénez Hogsheads from the southern tip of Spain, for a sun-kissed, sweet finish.

The Redbreast Iberian Series celebrates our long standing unique association with the Iberian peninsula. The Iberian Series adds a new and exciting chapter to the Redbreast Family story with whiskeys finished in casks sourced from the sun-drenched bodegas of Spain and Portugal, suffused with the natural warmth and sweetness of the Iberian peninsula. Redbreast Lustau is firmly the anchor of the series and will be joined by Limited Releases from time to time. Each expression in this Limited Edition series will be a new chapter in exploring the casks, flavours and aromas from this region.
We have collaborated with The Spanish Chef, Omar Allibhoy, for the launch of Redbreast PX to introduce some delicious food pairings to enjoy with the whiskey.

Redbreast is thrilled to collaborate with Omar Allibhoy, the Spanish Chef, on the launch of Redbreast PX Edition. Omar is a celebrity chef on a mission to bring Spanish food and culture to the UK. He owns the Tapas Revolution restaurant chain and is also the executive chef at London's El Pirta Detapas. He has been the driving force behind the tapas cooking trend within the UK and is a notable figure within the foodie arena.
‘My passion for Spanish food is really at the heart of everything I do; my earliest memory is of watching my Mum in the kitchen cooking crème caramel. She was a great baker but a terrible cook so I took over the helm as soon as I was old enough. When I came to the UK I was shocked by the lack of Spanish restaurants and how rarely anyone I spoke to cooked it at home. I decided it was time to do something about it and so my Tapas Revolution began.’ Omar

Redbreast PX is bottled at 46% ABV and without chill-filtration. It will be available end of September in selected retailers in Ireland, N. Ireland, UK, Finland, Global Travel Retail and in the US from November at RRP of €80 (£72 & $86).
